Having grown watercress on their Dorset and Hampshire farms for over 150 years, it was in 2010 that farmer, Jon Old, first learnt of the similarities between his crops and that of the Japanese wasabi root.
Today the team recreate the growing conditions using traditional Japanese cultivation techniques. Their wasabi takes advantage of naturally abundant spring water rich in minerals and nutrients, which bubbles to the surface from artesian springs at the top of their beds.
